Vegan Carbonara

For 4 people:

Ingredients:

2 tablespoon of rapeseed oil

2 onions

4 cloves garlic

200g shredded spring cabbage

150g mushrooms

200g peas

4 tablespoons of dried parsley

300ml of coconut milk or soya milk

20g of vegan cheese

400g of pasta

2 cans of black beans

Method:

Put pan of water on for pasta

In a frying pan:

warm up the oil

add the chopped onions

add the minced garlic

add the shredded cabbage

add the chopped up mushrooms

add the peas

add the parsley

in a saucepan:

heat up the coconut milk or soya milk

add the grated vegan cheese

heat gently until the cheese is melted and the milk is hot

When all cooked, mix all together and serve.
