Vegan Chick Pea Curry
For 4 portions
Ingredients:
1 tablespoon of rapeseed oil.
1 onion
Handful of slice cauliflower florettes
3 garlic cloves
1 dessert apple
1 green pepper
3 teaspoon curry powder
1 tin of chickpeas
1 packet of tomato passata
handful of raisins
handful of frozen peas
Method:
heat up the oil in a frying pan.
fry the chopped up onion until soft.
add a handful of slice cauliflower florettes.
add 3 crushed garlic cloves.
add a chopped up dessert apple.
add a chopped up green pepper.
add 3 teaspoons of curry powder.
add a strained tin of chickpeas.
add a carton of tomato passata.
add a handful of raisins.
add a handful of frozen peas.
stir altogether.
simmer, covered for 10/15 minutes until all is cooked.
serve with rice, mango chutney, naan bread or chapattis.
