Vegan Chick Pea Curry

For 4 portions

Ingredients:

1 tablespoon of rapeseed oil.

1 onion

Handful of slice cauliflower florettes

3 garlic cloves

1 dessert apple

1 green pepper

3 teaspoon curry powder

1 tin of chickpeas

1 packet of tomato passata

handful of raisins

handful of frozen peas

Method:

  1. heat up the oil in a frying pan.

  2. fry the chopped up onion until soft.

  3. add a handful of slice cauliflower florettes.

  4. add 3 crushed garlic cloves.

  5. add a chopped up dessert apple.

  6. add a chopped up green pepper.

  7. add 3 teaspoons of curry powder.

  8. add a strained tin of chickpeas.

  9. add a carton of tomato passata.

  10. add a handful of raisins.

  11. add a handful of frozen peas.

  12. stir altogether.

  13. simmer, covered for 10/15 minutes until all is cooked.

  14. serve with rice, mango chutney, naan bread or chapattis.
