Easy Vegan Christmas Biscuits 🎅✨
Ingredients
2 ¼ cups plain flour
½ teaspoon ground ginger
½ teaspoon mixed spice
½ teaspoon cinnamon
Pinch of ground cloves
½ cup caster sugar
110 g coconut oil
¼ teaspoon salt
Approx. 3 tablespoons water
Method
Preheat oven to 190°C (fan 170°C / 375°F / Gas 5).
Add flour, ginger, mixed spice, cinnamon, cloves, sugar, coconut oil, and salt to a food processor or mixing bowl.
Mix until the texture resembles fine crumbs.
Gradually add water until it forms a soft dough.
Roll out on a floured surface.
Cut into festive shapes (stars, trees, snowflakes).
Place on a baking tray lined with parchment or a reusable liner.
Bake for about 10 minutes, until lightly golden.
Allow to cool.
Enjoy plain, or decorate with icing, melted chocolate, and sprinkles.
Store in an airtight tin for up to a week.
