Cottage Pie with Black Beans

Ingredients for 4 portions:

1 tablespoon of sunflower or rapeseed oil

3 large carrots

1 turnip

2 sticks celery

1 onion

2 tins of black beans

1/2 teaspoon basil

1/2 teaspoon sage

1 tablespoon soy sauce

250ml vegan gravy

large pan of mashed potato with soya milk and vegan margarine

  1. put potatoes onto boil and then simmer for about 20 minutes until soft.

  2. put oil in frying pan and fry chopped up onion and celery until soft.

  3. add chopped up carrots and turnip to frying pan.

  4. add 2 tins of strained black beans.

  5. add basil, sage, soy sauce and gravy.

  6. when the vegetables are soft put into an oven dish.

  7. cover with the mashed potato and smooth down with a fork.

  8. bake for about half hour until brown and crispy at 160C fan, 180C, 360F or gas number 4.
