Lentil and Mango Magic
This is a really lovely easy meal, enough for 4 servings, or store in the fridge for up to 3 days.
I am using some cooked speckled lentils, but it works just as well with a couple of tins of black beans.
In a saucepan add 3.5 cups of cooked speckled lentils or tinned black beans
add half pint of water with 20g of coconut powder whisked in
1 tablespoon of lime juice.
1 teaspoon of chilli powder, or more if you like your meals hot
a couple of pinches of salt
cook over a medium high heat until the coconut milk comes to a boil
decrease the heat to medium low cover and cook, stirring from time to time for 10 minutes
whilst that is cooking prepare the mango
You will need 4 cups of fresh or frozen mango.
Once the ten minutes is up, stir in the mango, cover and cook for a further 3 minutes or until heated through.
Stir occasionally.
Serve over a bed of rice.
