For 8 Burgers

Ingredients:

2 cups of chopped mushrooms

1 cup of cooked lentils

1 cup of grated cauliflower

1 cup of white breadcrumbs

1 chopped up red onion

2 teaspoons of linseed (flax seed)

1 teaspoon chilli powder

1 teaspoon lemon juice

salt

pepper

1/2 teaspoon of each of the following: thyme, oregano and paprika

2 tablespoons soya sauce

2 tablespoons rapeseed oil

2 crushed garlic cloves

Method:

  1. heat up rapeseed oil in a frying pan

  2. fry onion until soft

  3. add crushed garlic cloves

  4. add mushrooms, cauliflower, linseed, chilli powder, lemon juice, salt, pepper, thyme, oregano and paprika and fry until all soft and mixed together.

  5. add soya sauce

  6. add breadcrumbs

  7. turn off the heat and add the red lentils, stir in thoroughly

  8. line a large roasting tin and divide the mixture into 8 burger shapes and bake for about 25 minutes until firm and browned.

  9. spread a bread roll with vegan margarine and add the burger and anything else you fancy, gherkins, lettuce, tomato, mayo, etc
