How to make pinto beans recipe with mashed potatoes (serves 4)

boil enough potatoes for four portions

put 1 tablespoon of rapeseed oil in a frying pan and heat up

add a chopped up onion and cook until soft

add 4 crushed garlic cloves and stir in

add 1 carrot chopped up into small pieces

add 1 pepper chopped up

add 4 mushrooms chopped up

add 2 tablespoons of soya sauce

add 280ml of vegan gravy

add a tin of strained pinto beans

leave to cook until the carrots are soft

just before serving add 2 tablespoons of nutritional yeast with B12 and stir in thoroughly

mash the potatoes and add vegan margarine and soya milk to make in creamy

serve a portion of mashed potatoes with a portion of the pinto bean mixture and enjoy, yum!
