Red cabbage soup - 6 portions

put the following into a large slow cooker:

2 tablespoons of rapeseed oil

2 chopped up red onions

1/2 cup of lentils

1 1/2 cups of ground walnuts

5 chopped medium carrots

2 large chopped potatoes

a chopped small red cabbage

handful of raisins/sultanas

6 1/2 cups of water

2 vegetable stock cubes

500g carton of passatta

put on high for 8 hours

blend with a stick blender or cool and blend in a food processor

This can be successfully made in a large saucepan as well, probably about 1/2 hour.

makes 6 portions, can be stored for a few days in the fridge or a few months in the freezer.

defrost thoroughly before heating through.
