These vegan sausage rolls are absolutely delicious and very easy to make, especially if you buy the puff pastry ready made.

I have found that this recipe makes 6 to 8 sausage rolls.

Ingredients:

  • 1 cup cooked green or brown lentils
    (well‑drained )

  • 1½ cups finely chopped mushrooms

  • 1 small onion, finely diced

  • 3 teaspoons of garlic granules

  • ¾ cup breadcrumbs

  • 2 tablespoons soy sauce or tamari

  • 1 tablespoon tomato ketchup

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried sage

  • 1 teaspoon dried thyme

  • ½ teaspoon fennel seeds

  • ½ teaspoon salt

  • 1 tablespoon of nutritional yeast

  • Black pepper to taste

Method:

  1. Cook down the mushrooms
    Sauté mushrooms in a dry pan first to evaporate moisture. When they start to brown, add a splash of oil, onion, and garlic. Cook until soft and fragrant.

  2. Mash the lentils
    Use a fork or potato masher. Leave some texture — you don’t want a purée.

  3. Combine everything
    Add lentils, cooked mushroom mix, breadcrumbs, soy sauce, tomato paste, herbs, spices, salt, and pepper. Mix thoroughly.
    If it feels too wet, add more breadcrumbs. If too dry, add a teaspoon of water or oil.

  4. Chill for 20–30 minutes
    This helps the mixture firm up and bind.

  5. wrap in puff pastry and bake at 200°C until golden.

Very handy for taking out on a walk, as a tasty protein boost when you need it.

Also, good for eating as part of a cooked tea.
