How to make Spaghetti squashynase.

Serves 4

Ingredients:

A pumpkin or squash Spaghetti

1 onion

2 teaspoons of garlic granules

100g of ground walnuts

a couple of sweet peppers

100g mushrooms

tin of chopped tomatoes

chilli flakes (optional)

2 teaspoons curry powder

2 tablespoons of smooth peanut butter

salt pepper

Method:

1. turn oven on at 180C (fan).

2. wash and cut squash in half.

3. brush olive oil on the bottom of a tin.

4. put the squash flesh side down on the tin.

5. bake in the oven at 180C (fan) until the flesh is soft, about half hour.

6. fry chopped up onion in some olive oil in a frying pan.

7. add the garlic powder.

8. add the peppers.

9. add the mushrooms.

10. add the ground up walnuts and peanut butter.

11. add the curry powder and chilli flakes if desired.

12. when cooked add the tin of chopped tomatoes.

13. when the squash is cooked, scoop out of the skin and cut into pieces.

14. add to the frying pan and stir in and keep warm whilst cooking the spaghetti.

15. put spaghetti into a saucepan of boiling water and cook until just done.

16. add salt and pepper to taste.
