How to make vegetables in Satay Sauce (serves 4)

Put 1 tablespoon of oil in a frying pan

fry a chopped up onion until soft

add 2 crushed garlic cloves

add 1/4 cauli, or mushrooms or other vegetables

add a chopped up pepper

1 cup of frozen peas or some broccoli florets

add a tin of strained red kidney beans

1 cup of sweetcorn

mix everything together

make a gap in the middle of the frying pan

into the gap put 1/2 cup of smooth peanut butter

1/2 cup of water

4 tablespoons of soy sauce

4 tablespoons of cider vinegar

the juice from 1 lime

1/2 a grated cucumber

mix the sauce together in the middle of the frying pan and when smooth mix in the vegetables

leave to cook whilst cooking the pasta

just before serving add 3 tablespoons of nutritional yeast to the frying pan mixture and stir in thoroughly

serve on top of the pasta
